There’s a reason why vanilla is the most popular flavour… and here’s the recipe for perfect vanilla cookies, just to prove it.
Makes about 24 (depending on size of cookies)
225g unsalted butter at room temperature
225g caster sugar
1/2 tsp vanilla extract
pinch of salt
450g plain flour (plus extra for dusting)
Preheat the oven to 180 degrees (conventional) 160 degrees (fan)
Cream together the butter and sugar until light and creamy.
Add the egg, vanilla and salt, and mix well.
Gradually add the flour and mix until incorporated.
Bring together in a dough, then flatten into a disc. Wrap in clingfilm and refrigerate for 2 hours.
Roll the dough out on a lightly floured work surface to a thickness of 3 – 4 mm.
Stamp out the shapes you want using a cookie cutter.
Arrange them on a pre-prepared baking tray, covered with baking paper.
Bake the cookies for approximately 15 minutes, or until golden brown.
Leave to cool in the trays before transferring to a wire rack to cool completely.
